What you need

Ingredients

  • 2 onions (or shallots), finely diced
  • 6 cloves garlic, finely chopped
  • 4 tablespoons olive oil
  • 1 good bunch fresh parsley, chopped
  • 2 cans cannellini beans, rinsed and drained
  • Fresh or dried oregano
  • 1 teaspoon paprika
  • Fresh or dried basil
  • Salt and black pepper
  • 1 teaspoon harissa, homemade or store-bought
  • 7 tablespoons tomato purée
  • Hot water, to loosen the stew
  • Fresh spinach
  • Feta cheese, for topping
  • Crusty bread, to serve

How to make it

Method

1. Prepare the ingredients

Finely dice the 2 onions, finely chop 6 cloves of garlic and chop a good bunch of parsley.

2. Soften the onions and garlic

Heat 4 tablespoons of olive oil in a large pot over low to medium heat. Add the onions and garlic and cook gently until soft and fragrant.

3. Build the flavour

Add the parsley, oregano, basil, 1 teaspoon of paprika, 1 teaspoon of harissa, salt and black pepper. Stir well.

4. Add the tomato purée

Stir in 7 tablespoons of tomato purée and cook for a minute or two to deepen the flavour.

5. Add the beans and hot water

Add the 2 cans of rinsed and drained cannellini beans, then pour in enough hot water to loosen the stew. Stir to combine.

6. Simmer

Cover and simmer gently over low heat, stirring occasionally, until the stew is rich and thick. Add a little more hot water if needed.

7. Add the spinach

Stir in the fresh spinach and cook for a few minutes until wilted.

8. Top with feta and serve

Crumble or cube the feta over the top. Serve hot with crusty bread, or enjoy it on its own.
