What you need

Ingredients

  • 1.5kg organic wholemeal flour
  • 3 teaspoons yeast
  • 3 teaspoons sugar
  • 3 teaspoons salt
  • 4 tablespoons organic olive oil
  • 1,000ml tepid water

How to make it

Method

1. Prepare the flour

Pour the 1.5kg of organic wholemeal flour onto a clean kitchen worktop or into a large mixing bowl. Add the sugar and yeast, then mix together.

2. Add the water

Pour in approximately 500ml of tepid water and mix. Gradually add the remaining water while bringing the flour together with your hands to form a rough, craggy dough.

3. Add the salt and olive oil

Add the 3 teaspoons of salt and 4 tablespoons of organic olive oil. Work them into the dough until everything is evenly combined.

4. Knead the dough

Knead the dough using your hands, pressing it approximately 100 times until it becomes more cohesive and elastic. Avoid adding extra flour unless absolutely necessary.

5. Let the dough rise

Cover the dough with a clean tea towel and leave it in a warm place for approximately 1 hour, or until it has doubled in size.

6. Knead and divide

Knead the risen dough again, using approximately 100 presses. Divide it into three equal portions and shape each portion into a loaf.

7. Shape the loaves

Place the three portions into prepared bread tins. Cover the tins with a clean tea towel and leave them in a warm place for approximately 40 minutes, until the dough has risen again.

8. Preheat the oven

Preheat your oven to 220°C / 425°F / Gas Mark 7. Make sure the oven is fully heated before baking.

9. Bake the bread

Bake the loaves for 40–45 minutes, until the crusts are golden brown and the loaves are cooked through.

10. Check and cool

Carefully remove the loaves from their tins. Tap the bottom of each loaf; a hollow sound is a useful sign that the bread is cooked. Allow the loaves to cool on a wire rack before slicing.
