What you need

Ingredients

  • 200g tinned or jar of tuna
  • 5 cloves garlic, finely chopped
  • A handful of fresh parsley
  • Fresh basil, or dried basil
  • Fresh oregano, or dried oregano
  • ½ fresh chilli
  • 2 tablespoons olive oil
  • 50ml white wine
  • 5 tablespoons tomato purée
  • 200ml hot water
  • 100g green olives
  • 2 pinches of salt
  • Black pepper, to taste
  • Linguine for 2 people
  • Approximately 4 litres of water for cooking the pasta

How to make it

Method

1. Prepare the ingredients

Finely chop a handful of parsley, removing the stalks. Chop the basil and oregano, using dried herbs if preferred. Peel and finely chop 5 cloves of garlic.

2. Fry the garlic and chilli

Heat 2 tablespoons of olive oil in a pan. Add the chopped garlic. Roughly chop half a fresh chilli, add it to the pan and stir.

3. Add the tuna and wine

Add 200g of tuna and stir well. Pour in 50ml of white wine.

4. Season the sauce

Add the parsley, basil and oregano. Season with 2 pinches of salt and black pepper. Stir in 5 tablespoons of tomato purée and mix everything together.

5. Add water and olives

Slowly add approximately 200ml of hot water, stirring as you pour. Add 100g of green olives.

6. Simmer the sauce

Cover the pan and simmer gently over low heat for 45 minutes to develop a richer flavour. Stir occasionally to prevent the sauce from sticking. During the last 15 minutes, prepare the pasta.

7. Cook the linguine

Bring approximately 4 litres of water to the boil. Cook the linguine according to the packet instructions until al dente.

8. Drain and serve

Drain the linguine and do not rinse it. This helps the sauce cling to the pasta. Serve immediately with the tuna sauce.
