What you need

Ingredients

  • FOR THE KING PRAWNS & SAUCE
  • 6 large king prawns
  • 4 tablespoons olive oil
  • 4 cloves garlic, finely chopped
  • 1 fresh chilli, finely chopped
  • A small handful of fresh parsley, finely chopped
  • 50ml white wine
  • 4 teaspoons tomato paste
  • 200ml hot water
  • 2 pinches of salt
  • 2 pinches of black pepper
  • FOR THE OVEN-BAKED BROWN RICE
  • 125g brown rice
  • 370ml water

How to make it

Method

1. Prepare the ingredients

Remove the thick stems from the parsley and finely chop the leaves. Peel and finely chop 4 cloves of garlic and finely chop 1 fresh chilli.

2. Start the rice

Add 125g of brown rice to an ovenproof dish and pour in 370ml of water. Cover the dish tightly and bake at 180°C / Gas Mark 4 for approximately 50 minutes, or until the rice is tender and the water has been absorbed.

3. Heat the olive oil

Warm a large pan and add about 4 tablespoons of olive oil.

4. Fry the king prawns

Add 6 large king prawns to the pan and fry until golden on both sides. Remove the prawns from the pan and set them aside.

5. Fry the garlic, chilli and parsley

Reduce the heat to low. Add the chopped garlic, chilli and parsley to the pan and fry gently until fragrant.

6. Deglaze with white wine

Deglaze the pan with 50ml of white wine.

7. Add the tomato paste

Add approximately 4 teaspoons of tomato paste and stir well.

8. Add the water and season

Pour in approximately 200ml of hot water. Season with 2 pinches of salt and 2 pinches of black pepper.

9. Simmer the sauce

Cover the pan and let the sauce simmer gently over low heat for 45 minutes.

10. Return the prawns

Add the golden king prawns back into the sauce and simmer gently for a few minutes, just to warm them through.

11. Serve

Serve the oven-baked brown rice with the garlic, chilli and tomato king prawns.
