Pasta

125g linguine

What you need

Ingredients

  • 125g linguine
  • 2 pinches of salt, for the pasta water
  • 4 tablespoons olive oil
  • 2 cloves garlic, finely chopped
  • ½ fresh chilli, finely sliced
  • A handful of cherry tomatoes, halved
  • 10 mid-size king prawns
  • A handful of fresh parsley, finely chopped
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 50ml white wine
  • A knob of butter

How to make it

Method

1. Cook the linguine

Bring a pan of water to the boil and add 2 pinches of salt. Add 125g of linguine and cook following the packet instructions, stirring occasionally, until al dente.

2. Prepare the ingredients

Finely chop a handful of fresh parsley. Peel and finely chop 2 cloves of garlic. Halve a handful of cherry tomatoes and finely slice half a fresh chilli.

3. Start the chilli and tomatoes

Warm a frying pan over low heat and add about 4 tablespoons of olive oil. Add the sliced chilli and halved cherry tomatoes to the pan.

4. Score the king prawns

Score the 10 mid-size king prawns so they cook evenly and absorb more flavour.

5. Add the prawns and garlic

Give the pasta one more stir. Add the king prawns and garlic to the pan, followed by the chopped parsley.

6. Season and add the wine

Season with a pinch of black pepper and a pinch of salt, then pour in 50ml of white wine.

7. Combine the pasta and sauce

Lift the linguine from the water, let it drain, and add it to the pan. Add a knob of butter and stir until everything is glossy and coated.

8. Serve

Serve the linguine while it's hot.
