What you need

Ingredients

  • 2 organic onions, finely chopped
  • 4 tablespoons olive oil
  • 2 cloves garlic, finely chopped
  • 1 organic butternut squash, peeled and diced
  • 1 bunch fresh parsley, stems removed and leaves finely chopped
  • 2 pinches of salt
  • 2 pinches of black pepper
  • 1 teaspoon paprika
  • 1 teaspoon harissa paste, or your favourite chilli paste
  • 6 teaspoons tomato paste
  • 200ml hot water
  • Penne pasta, as needed
  • Extra salt for the pasta water

How to make it

Method

1. Warm the pan

Warm a large pan over low heat.

2. Add the vegetables

Add the finely chopped onions, garlic and diced butternut squash to the pan.

3. Caramelise gently

Let the vegetables cook gently over low heat until they begin to caramelise.

4. Season the vegetables

Add 2 pinches of salt, 2 pinches of black pepper, 1 teaspoon of paprika and the chopped parsley. Stir well.

5. Add the harissa and tomato paste

Stir in 1 teaspoon of harissa paste and 6 teaspoons of tomato paste, mixing everything together.

6. Simmer the sauce

Pour in 200ml of hot water. Cover the pan and simmer gently over low heat for 45 minutes, stirring occasionally to prevent sticking.

7. Cook the penne

During the last 15 minutes of cooking, bring a pan of salted water to the boil. Cook the penne according to the packet instructions until al dente.

8. Combine the pasta and sauce

Drain the penne and add it to the butternut squash sauce. Stir gently until the pasta is coated.

9. Serve

Serve hot and enjoy your homemade Creamy Butternut Squash Penne.
