What you need

Ingredients

  • 400g cherry tomatoes
  • Gnocchi
  • 200g fresh spinach
  • 4 cloves garlic
  • Bunch of fresh parsley
  • 4 tablespoons olive oil
  • 50ml white wine
  • 500g cannellini beans
  • Parmesan
  • Mozzarella
  • 2 pinches Salt
  • 2 pinches Black pepper

How to make it

Method

1. Prepare the oven and water

Preheat the oven to 200°C / Gas Mark 6. Bring a large pan of water to the boil.

2. Prepare the parsley

Remove the thick stems from the parsley and finely chop the leaves.

3. Start the sauce

Heat about 4 tablespoons of olive oil in a pan. Finely chop 4 cloves of garlic and fry gently. Halve the 400g of cherry tomatoes and add them to the pan with the chopped parsley.

4. Add the 500g cannellini beans

Rince and drain the cannellini beans, then add them to the pan.

5. Add the spinach

Roughly chop the 200g of fresh spinach. Simmer the tomatoes gently until they start to pop and release their juices.

6. Cook the gnocchi

Add 2 pinches of salt to the boiling water. Drop in the gnocchi and cook for 2–3 minutes, or until they float to the surface.

7. Finish the sauce

Add the chopped parsley and spinach to the tomato sauce. Season with 2 pinches of salt and 2 pinches of black pepper. Pour in about 50ml of white wine and allow everything to warm through.

8. Add the gnocchi to the cooking water

Add about 4 tablespoons of the gnocchi into the cooking water to loosen the sauce. Stir to combine.

9. Combine

Drain the gnocchi and tip it into the sauce. Stir gently to combine.

10. Add the cheese

Scatter over the Parmesan and mozzarella.

11. Bake

Bake at 200°C / Gas Mark 6 for about 10 minutes, or until golden and bubbling.

12. Serve

Serve hot and enjoy your homemade Baked Gnocchi.
